Black Lily Heirloom Lunch
Back in Florida and finding heavenly produce at Detwilers Market until my own garden can get planted. This delicious, healthy and easy lunch can be on your table , hopefully on one of my handmade plates in just 15 minutes. How is that for vegetable happiness? Ingredients
1 Large heirloom tomato (color of choice- they are all gorgeous)
1 medium zucchinni
1/4 red pepper
1/2 small onion
1 medium carrot ( I had a lovely purple and yellow interior)
2 large button mushrooms
1 egg
2 Tablespoons flour
1/4 cup semolina
fresh ground black pepper and salt to your preferences
2 Tablespoons of olive oil
4 Tablespoons of good Mayonaise mixed with 2 tablespoons of pesto
1/4 cup of good shaved parmesean cheese
Preperation
Heat olive oil in a non stick skillet to medium high heat
shred the zucchinni with a cheese grater using the larger holes on a box grater
shred also , the pepper, onion, mushrooms and carrot
in a med bowl whisk egg and 2 tablespoons of white flour into paste add in the vegetables and mix well
On a seperate plate make a layer of your semolina
Scoop out an 1/8 of a cup of the mixture and sqeeze out as much liquid as you can with clean hands , flatten into a patty and gently press down into the semolina turn over and coat both sides with semolina, repeat with all of your vegetable mixture and fry in olive oil until golden and fragrant. Place on top of those gorgeous heirloom tomato slices and top with pesto mayonaise and shaved parmesean cheese. Fabulous , easy and worthy of lunch guests.
